  Fried Rice Tips  Use cold rice:      You’ve gotta plan ahead and use thoroughly-chilled cooked rice. A fresh batch of warm rice will not fry well when it hits the hot pan, and will result in soggy and sticky clumps — no good. So leftover refrigerated rice is ideal! Or, if you are  in a hurry, just cook up a fresh batch of rice. Then spread it out on a baking sheet or another large flat pan, drape the rice with a layer of plastic wrap, then pop it in the fridge for 30 minutes (or in the freezer for 10-15 minutes) until it is thoroughly chilled (not frozen). Banana Pudding              Banana pudding is one of our all-time favorite desserts. It's a classic Soutern recipe , and for good reason; luscious layers of pudding, whipped cream, ripe bananas, and wafer cookies are completely impossible to resist. Ingredients 1 1/3 c.  whole milk 1  (5.1-oz.) package instant vanilla pudding mix 1  (14-oz.) can sweetened condensed milk 3 c.  heavy cream 1 tsp.  pure vanilla extract 1  (12-oz.) box vanilla wafer cookies 4  bananas, sliced into coins 2 tsp.  granulated sugar Method In a large mixing bowl, combine milk, vanilla pudding mix and sweetened condensed milk. Whisk thoroughly, breaking up any lumps, and refrigerate for at least 5 minutes, or until set. In another large bowl, combine heavy cream and vanilla. Beat until stiff peaks form, 2 to 3 minutes.
